{"id":1641,"date":"2013-04-20T17:18:46","date_gmt":"2013-04-20T17:18:46","guid":{"rendered":"http:\/\/davstott.me.uk\/?p=1641"},"modified":"2013-04-20T17:27:50","modified_gmt":"2013-04-20T17:27:50","slug":"salted-caramel-sauce","status":"publish","type":"post","link":"https:\/\/davstott.me.uk\/index.php\/2013\/04\/20\/salted-caramel-sauce\/","title":{"rendered":"Salted caramel sauce"},"content":{"rendered":"<p><div id=\"attachment_1643\" style=\"width: 160px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1643\" src=\"http:\/\/davstott.me.uk\/wordpress\/wp-content\/uploads\/2013\/04\/caramel-sauce-150x150.jpg\" alt=\"Caramel Sauce\" width=\"150\" height=\"150\" class=\"size-thumbnail wp-image-1643\" \/><p id=\"caption-attachment-1643\" class=\"wp-caption-text\">Caramel Sauce<\/p><\/div><br \/>\nMaking caramel is hard, but making a caramel sauce at home is surprisingly easy, taking three ingredients and just a matter of a few minutes, albeit a few minutes of paying close attention to the stove with a whisk. <\/p>\n<p>I&#8217;ve got a few uses for caramel sauce and I wanted to write down my recipe so that Google can find it more easily for me next time. <\/p>\n<p><!--more--><\/p>\n<h2>Ingredients<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/davstott.me.uk\/wordpress\/wp-content\/uploads\/2013\/04\/caramel-sauce-ingredients-150x150.jpg\" alt=\"caramel sauce ingredients\" width=\"150\" height=\"150\" class=\"alignright size-thumbnail wp-image-1644\" \/><br \/>\nMakes about 300g of caramel sauce<\/p>\n<p>180g sugar<br \/>\n90g butter<br \/>\n135ml cream<br \/>\n1\/2 or 1 teaspoon sea salt flakes (I&#8217;m pretty sure any pure salt will do). Use 1\/2 a teaspoon if you&#8217;re serving warm or at room temperature, a full teaspoon if frozen because cold dulls the flavour.<\/p>\n<h2>Method<\/h2>\n<p>Put the sugar and butter into a pan and gently melt them together. You can also quickly melt them together, but you&#8217;ll need to whisk whilst you&#8217;re doing it, otherwise the bottom of the sugar will melt and caramelise before the butter melts which takes a bit of elbow grease to reincorporate them again.<\/p>\n<p>Heat it up for a bit until it starts to darken, then mix in the cream a bit at a time. The reason you want to mix it in a bit at a time is that the cream will be cold enough to make the sugar set which would result in lumps that you&#8217;d have to melt and whisk out.  <\/p>\n<p>Stir in the salt, then simmer it for a couple of minutes and then pour into a jug to cool.<\/p>\n<div id=\"attachment_1645\" style=\"width: 470px\" class=\"wp-caption alignnone\"><br \/>\n<img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1645\" src=\"http:\/\/davstott.me.uk\/wordpress\/wp-content\/uploads\/2013\/04\/caramel-sauce-method-1-150x150.jpg\" alt=\"Butter and sugar in the pan.
