What highly detailed scientific evidence do I have to back up such a claim? Well, the last week of June is when I make that year&#8217;s supply of Elderflower Cordial and the flowers were at the end of their season for the last two years, whereas they were only just coming out this year. Around these parts, they&#8217;re out for 2 to 3 weeks, so there we have it. Totally unconclusive science \ud83d\ude42<\/p>\n<p>Aanyway, this is the recipe I follow to turn these nice smelling flowers into a light refreshing drink that lasts all year. <\/p>\n<h2 style=\"clear:both;\">Ingredients<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/davstott.me.uk\/wordpress\/wp-content\/uploads\/2012\/07\/P1060797-150x150.jpg\" alt=\"\" title=\"P1060797\" width=\"150\" height=\"150\" class=\"alignright size-thumbnail wp-image-1263\" \/>Makes about 1 litre<\/p>\n<p>25 freshly picked heads of Elderflowers (Sambucus subsp somethingOrAnother)<br \/>\n1 small lemon<br \/>\n600ml water<br \/>\n800g white sugar<br \/>\n35g citric acid<\/p>\n<p>Cheesecloth \/ Muslin \/ boiled J-cloth<br \/>\nHuge bowl<\/p>\n<h2>Method<\/h2>\n<p><div id=\"attachment_363\" style=\"width: 160px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-363\" src=\"http:\/\/davstott.me.uk\/wordpress\/wp-content\/uploads\/2009\/06\/IMG_2950-150x150.jpg\" alt=\"\" title=\"Start of the infusing\" width=\"150\" height=\"150\" class=\"size-thumbnail wp-image-363\" \/><p id=\"caption-attachment-363\" class=\"wp-caption-text\">Throw it all into a bowl and pour over the hot syrup<\/p><\/div>  Pick through the Elderflowers, shake off the worst of the little black bugs that you&#8217;ll inevitably get. Put them into a huge bowl.<\/p>\n<p>Thickly slice the lemon and put that into the bowl too.<\/p>\n<p> Put the sugar and water into a pan and heat it up so that the sugar dissolves into a heavy syrup. Take it off the heat, stir through the citric acid powder and pour it all into the bowl.<\/p>\n<p>Cover the bowl and leave it for at least 1 day, preferably 2.
